Management ResponsibilitiesFood Hygiene LegislationSince the 1 st January 2006, new EU food hygiene legislation has applied throughout the UK. Who has to comply with new EU Regulations? All Food business, whether private or public sector and whether profit or non-profit making that carry out any stage of production, processing and distribution of food. What does the law say?In order to comply with the law you must be able to demonstrate that you produce food safely. You can do this by demonstrating how you produce food to HACCP principles. All staff must have an appropriate level of knowledge of food hygiene in order to produce food safely. You must also register your premises with your local environmental health food safety team. How do you become compliant with the law? When you are audited by an Environmental Health Officer you must be able to show what provision you have made for food hygiene training. The recommendations from The Chartered Institute of Environmental Health and The UK National Occupational Standards also suggest you should train your staff with a course that is relevant to the sector they work in. You should also show how your premises practices the principles of HACCP -which are covered by our course. Safer Food, Better BusinessSafer food, better business (SFBB) was developed by the Food Standards Agency to assist small food businesses in complying with the requirements for documented HACCP-based procedures, effective from 1 January 2006. The Agency has produced a range of SFBB packs for small caterers and retailers and an interactive DVD guide with voiceovers in 16 languages. SFBB for caterers and SFBB for retailers were designed to work in most small catering and food retail businesses (excluding specialist retailers such as butchers, fishmongers and bakers). The food business operator completes the ‘safe methods’ in the pack and tailors them to become specific to their particular business. The use of a common pack across a wide range of businesses has enormous benefits for businesses, their staff and enforcement officers. However, a number of local authorities (LAs) have already produced adaptations of SFBB or additional safe methods.
